The story of Danny Dollar’s tea
From Higashiyama, well known for high quality green tea, we have prepared products that would fit in various situations, from everyday use for yourself to formal gift or souvenir for overseas. The deep tea flavor may make your special someone think of you when she/he drinks the tea.
Our tea leaves made using farming methods that have been practiced naturally since ancient times. The deep steaming technique, which was started by our predecessors in the past to soften the overly strong astringency. By this technique, the tea with good water color and a mellow taste was born, and has been handed down to this day.
Feature 01.
Tea farms protected by Awagatake
Awagatake, the symbolic hill of Higashiyama district, is providing a good environment for tea cultivation. High-quality tea cultivation has been continued for a long time in this area under the favorable environment where many slopes around Awagatake helps tea farms to receives a lot of sunlight, in addition to the nature of the land with long hours of sunshine.
Feature 02.
A Globally Important Agricultural Heritage System
In 2013, the “Chagusaba Farming Method” in the Higashiyama was designated as a Globally Important Agricultural Heritage System.
“Cagusaba” is the area around tea farms where wild grasses and creatures are kept naturally on purpose. The grasses becomes “blanket” for tea farms after summer. From autumn to winter, tea famers cut grass such as Japanese pampas grass and bamboo grass around the tea garden and dry them up making “Kapposhi”, bunch of grasses.
After being dried, they are cut into small pieces and spread over the ridges of the tea farms.
These pieces of dried grasses spread to tea farm return to the soil and it makes soft and nutritious rich soil where high quality tea could be grown.
Until the new shoots appear, tea farmers in Higashiyama spend more time and effort than you can imagine.
Regular mowing of the grass with this farming method also contributes to the conservation of biodiversity. Endangered species and rare wild fauna and flora are protected in Chagusaba.
This series of unique and traditional farming methods has been recognized as a Globally Important Agricultural Heritage System.
